Steps

  1. Start by slicing the chicken breasts into thinner pieces, or pound them out until they're nice and thin.

  2. Pop the chicken into the sauce and garlic and let it marinate for 2-12 hours. This step is optional: a longer marinade gives you more flavor, but a quick 15-30 minutes works beautifully too!

  3. Get your rice going according to the package directions.

  4. Whisk the sesame drench ingredients together in a bowl, then set it aside for later.

  5. When you're close to ready to eat, toss the peaches, scallions, ginger, salt, and sugar together. The peaches will usually release some juices and turn slightly saucy, but if it looks a little dry, add a drizzle of honey to help it along.

  6. Heat the avocado oil in a large skillet over medium heat. Let any extra marinade drip off the chicken, then add it to the pan and sauté for 3-4 minutes per side, until the chicken reaches an internal temperature of 165 degrees.

  7. Serve the chicken over a bed of rice with a scoop of the peaches and a generous drench of the sesame sauce. Add some green beans if you like. So fresh and delicious!
