Ingredients
Steps
Grab a small bowl and stir together the salt, paprika, sage, thyme, pepper, garlic powder, and onion powder until they're evenly mixed. Pat the chicken thighs dry with paper towels, then sprinkle the seasoning generously over both sides. Set the thighs skin-side up on a wire rack placed over a foil-lined baking sheet, and pop them in the fridge, uncovered, for at least 12 hours or up to 24 hours. (A quick heads-up: you'll notice a savory, seasoned smell when you open the fridge. That's totally normal! The chicken needs to stay uncovered so the skin can dry out and turn wonderfully crisp in the oven.)
When you're ready to cook, preheat the oven to 425°F (220°C) and place an oven rack in the middle position.
Leave the chicken on its wire rack over the baking sheet and bake for 35 to 45 minutes, until the thickest thigh reads 185°F (85°C) on an instant-read thermometer. If the skin starts browning faster than the meat is cooking, just loosely tent the chicken with foil until the thighs are done. Let the chicken rest for 5 minutes before serving, then enjoy!
